- 1 20 oz package Simply Potatoes® Shredded Hash Browns
- 1/4 cup milk
- 1 cup shredded Colby and Monterey Jack Cheese
- 3 eggs
- 1/2 cup red bell pepper, diced
- 1/2 cup corn
- 1/4 cup diced green onions
- 1/2 tsp chili powder
- 1/4 tsp cumin
- salt and pepper
Preheat waffle iron to the medium-high setting. Coat each side of the iron with non-stick cooking spray.
In a large bowl, mix together eggs and milk. Stir in hash browns, cheese, pepper, onion, corn, chili powder, cumin and salt and pepper.
Spoon a layer of the mixture on the waffle iron. Cook for 5-6 minutes.
When waffle turns golden brown, remove from waffle iron with a fork.
