Ingredients

  • 2 1/2 cups oatmeal
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup light brown sugar
  • 2 eggs
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 1/4 cup milk
  • 1/2 cup semi-sweet chocolate chips

Instructions

  • Preheat oven to 375 degrees F. Spray an 8 x 8 casserole dish with nonstick cooking spray.
  • In a large bowl, stir oats, cocoa powder, baking powder, and salt.
  • Stir in melted butter. Mix in vanilla extract, milk, and eggs.
  • Pour the mixture into prepared baking dish and spread into an even layer. Spread chocolate chips on top of the oatmeal mixture.
  • Bake for 25-30 minutes. Let cool for 5-10 minutes before cutting and serving.
