Pineapple Casserole

This easy pineapple casserole is a delicious Southern dish that is salty, sweet, and so delicious. This pineapple casserole is topped with buttery Ritz crackers and can be served as a side dish or dessert.

Ingredients

  • 2 cans pineapple tidbits drained reserving 1/4 cup juice
  • 1/2 cup sugar
  • 2 cups shredded sharp cheddar cheese
  • 1/3 cup all-purpose flour
  • 2 sleeves butter crackers, crushed
  • 6 tablespoons unsalted butter, melted

Instructions

  • Preheat the oven to 350 degrees F. Spray either a 9-inch pie dish or a 1 1/2 quart casserole dish with non-stick cooking spray.
  • Drain the pineapple tidbits, reserving 1/4 cup of the pineapple juice.
  • In a large bowl, stir together sugar, flour, cheese, reserved pineapple juice, and pineapple tidbits.
  • Pour the pineapple mixture into prepared dish.
  • Mix together crushed crackers and melted butter. Spread over the top of the pineapple mixture.
  • Bake for 25-30 minutes or until top is golden brown.

Notes

  • If possible, use freshly shredded cheese. It has a better taste and melts better.
  • You can substitute pineapple tidbits with pineapple chunks or even crushed pineapple.
  • Check the casserole after 20 minutes of baking. If you notice the cracker crumbs browning too fast, you can cover the dish with aluminum foil.
