Ingredients

  • 3 tablespoons butter
  • 2 12.4 ounce cans cinnamon rolls plus the included icing
  • 4 eggs
  • 1/2 cup half and half
  • 1 teaspoon vanilla extract
  • 2 teaspoons cinnamon
  • 1/3 cup light brown sugar

Instructions

  • Preheat the oven to 350 degrees F.
  • Cut each cinnamon roll into 8 pieces.
  • In a large mixing bowl, whisk eggs, half and half, vanilla, and cinnamon. Add cut cinnamon rolls into the bowl. Toss to coat with the mixture.
  • Melt butter and pour into a 9 x 13 casserole dish to cover the bottom of the dish.
  • Pour cinnamon roll mixture into the casserole dish. Spread the mixture out in the dish. Sprinkle the top with brown sugar, this is optional but adds a nice flavor.
  • Sprinkle the top with brown sugar. Bake for 25-30 minutes.
  • Let the casserole cool for 5-10 minutes. Microwave each cup of icing for 10-15 seconds and pour over the casserole.

Notes

  • Try using a pizza cutter to cut the rolls into pieces. You can also use a sharp knife.
  • I recommend warming up the icing just a little in the microwave to make it simple to pour over the casserole. Try microwaving for 5-10 seconds.
