Bisquick Breakfast Casserole

Ingredients

  • 16 ounces breakfast sausage
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 3 cups frozen shredded hash browns
  • 2 cups shredded cheddar cheese
  • 1 cup Bisquick
  • 2 cups milk
  • 4 eggs
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  • Preheat oven to 375 degrees F. Spray a 9 x 13 casserole dish with non-stick cooking spray.
  • tart by cooking the breakfast sausage in a large skillet. You will want to crumble it up and cook until browned. Discard the excess grease and then add pepper and onion. Cook another 2-3 minutes to soften.
  • Add sausage mixture, hash browns, and half of the cheese into the dish. Stir the ingredients.
  • In a large bowl, whisk together eggs, milk, Bisquick, salt and pepper. Pour the egg mixture over the sausage mixture. Bake for 40-45 minutes or until the top starts to turn golden brown.
  • Top the casserole with remaining cheese. Bake for another 2-3 minutes or until cheese melts.
  • Let sit for 5 minutes before slicing.

Notes

  • If the casserole starts to get brown and it's not finished baking, lightly cover the dish with aluminum foil.
  • If you are planning on freezing this dish, use an aluminum pan. These are perfect for freezing and reheating.
