- 1 AdapTable Meals Carnitas Pork Roast
- 2 cups water
Mango Salsa
- 2 mangos, diced
- 1/2 cup chopped cilantro
- 1 red bell pepper, diced
- 1/4 cup diced red onion
- 2 tablespoons lime juice
- 1/4 teaspoon salt
Cilantro Rice
- 1 cup long grain rice
- 2 cups chicken stock
- 2 tablespoons lime juice
- 1/2 cup chopped cilantro
Mango Salsa
Mix together mango, red onion, cilantro, lime juice, salt and red bell pepper in large bowl.
Cilantro Rice
Rinse rice under cold water.
Add olive oil to sauce pan and heat.
Add rice and stir for 3 minutes.
Pour in chicken stock, let come to a boil. Cover and reduce heat to medium low.
Cook for 15 minutes. Remove saucepan from heat and let sit covered for 5 minutes.
Stir in lime juice and cilantro.
Divide rice, carnitas, and mango salsa into four bowls.
