Garlic Butter Chicken with Riced Cauliflower and Broccoli - Great for meal prep meals

- 1 1/2 pounds chicken breast cut into chunks
- 1 tablespoon olive oil
- 3 tablespoons butter
- 1/2 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon Italian seasoning
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 1 (12 oz) Green Giant Riced Veggies- Cauliflower and Broccoli
Place chicken pieces in a medium bowl. Season with salt, ground black pepper, garlic powder, Italian seasoning, lemon zest, lemon juice and olive oil. Toss chicken until it's all coated.
Add butter and minced garlic to a large skillet. Melt 2 tablespoons butter over medium-low heat.
Pour chicken into skillet and cook on medium heat until the chicken has started to turn golden brown and is cooked through. This usually takes about 5-6 minutes.
Remove chicken from skillet and set aside.
Add 1 tablespoon butter and frozen riced cauliflower and broccoli to the skillet. Pour in chicken broth and cook until thawed and heated through. Season with salt.
Add chicken back in skillet to warm. Serve or divide into meal prep containers.
