- 2 (8 ounce) cream cheese, softened
- ½ cup sour cream
- 1 (1 ounce) package ranch seasoning
- 1 cup carrots, diced
- 1 cup broccoli florets, diced
- 1 cup bell peppers, diced
- ¼ cup red onion, diced
- ¼ cup sliced black olives
- ½ cup tomatoes, diced
- 1 cup shredded cheddar cheese
Place softened cream cheese, sour cream, and ranch seasonings in a large bowl. Mix until completely combined and creamy. ( I recommend using a mixer but you can also stir by hand.)
Stir in 3/4 cup of diced carrots, peppers, broccoli, and cucumber. Stir in the red onions, olives, and 3/4 cup of the shredded cheese.
Spread the mixture in a serving dish or pie plate. Top with the remaining vegetables, diced tomatoes, and remaining cheese.
Serve immediately or cover and refrigerate until ready to serve.
