Cajun Shrimp Meal Prep
Cajun shrimp with corn salad and rice.
- peeled, deveined shrimp
- 2 tablespoons olive oil
- 2 teaspoons Cajun Seasoning
- 1/2 tablespoon garlic powder
- 4 cups cooked rice white, brown or even quinoa
- 2 cups corn salad
Preheat oven to 400 degrees F. Mix together oil, Cajun Seasoning and garlic powder in a bowl. Toss raw shrimp in the mixture until coated.
Pour shrimp onto a rimmed baking sheet. Bake for 10 minutes.
Prepare rice according to package. Prepare corn salad according to recipe.
Scoop half rice into each container. Scoop a cup of corn salad into each container and add half the shrimp in each container.
