Easy Pumpkin Hummus
Easy, creamy pumpkin hummus. Great for your next holiday party.
- 1 cup pureed pumpkin
- 1 can chickpeas, rinsed and drained
- 2 tablespoons tahini
- 2 tablespoons olive oil
- 1/2 juice of lemon
- 1 clove garlic
- 1/4 teaspoon chili powder
- 1/2 teaspoon ground cinnamon
- 1 tablespoon honey
- optional: roasted pumpkin seeds and pomegranate seeds
Place chickpeas, pumpkin, garlic and tahini in food processor or blender. Blend for 30 seconds.
Add in spices, olive oil, honey and lemon juice. Blend until desired consistency. If you would like the hummus thinner, add in one tablespoon of aquafaba from chickpea can into mixture.
Place in serving dish and top with roasted pumpkin seeds and pomegranate seeds.
