Broccoli Pasta Salad

Broccoli pasta salad combines fresh broccoli, bacon, cheese, and a delicious homemade dressing to make a pasta salad that is delicious any time of year.

Ingredients

  • 16 ounce small shell pasta
  • 2 cups broccoli florets
  • ½ cup red onions, diced
  • 8 ounce colby jack cheese, diced
  • 12 pieces cooked bacon, crumbled
  • 1 cup mayonnaise
  • ¼ cup sour cream
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper

Instructions

  • Bring a large pot of water to a boil. Cook the pasta according to the package directions. Make sure to cook to al dente.
  • Pour the pasta in a colander to drain the water. Rinse the pasta with cold water.
  • Make the dressing by whisking together mayonnaise, sour cream, apple cider vinegar, sugar, salt, and pepper.
  • In a large bowl combine the cooked pasta, broccoli florets, crumbled bacon, diced red onions, and cubed cheese.
  • Pour the dressing over the pasta salad and toss to combine.
  • Cover and chill in the refrigerator for at least 30 minutes.

  • Cook the pasta until just al dente to help stop the cooking process.
  • Cut everything into small pieces like the broccoli florets, cheese, and onions.
  • Reserve a little bit of the dressing to mix in before serving. This will help the pasta salad be perfectly creamy.
