Turkey Roll Ups

These easy turkey roll ups are fast and simple to make. Deli turkey is paired with a flavorful cream cheese spread. Turkey pinwheels are great for an appetizer or light meal.

Ingredients

  • 3-4 burrito sized tortillas
  • 1 8 ounce cream cheese, softened
  • 1/2 cup sun dried tomatoes, chopped
  • 2 green onions, chopped
  • 8 leaves of lettuce
  • 8 slices deli turkey
  • 8 slices Swiss cheese

Instructions

  • Mix together softened cream cheese, green onions, and sun-dried tomatoes. Place a tortilla on a cutting board and spread out a layer of the cream cheese mixture on top of the tortilla. Make sure to spread it out to the edge of the tortilla.
  • Place lettuce down the center of the tortilla. Next lay slices of turkey on top of the lettuce and then cheese slices on top of the turkey.
  • Roll the tortilla lengthwise into a tight roll.
  • Wrap tightly in plastic wrap, like Saran Wrap. Place in the refrigerator until ready to slice and serve. Slice off the ends and then cut into equal pieces.

Notes

  • Make ahead: You can make these pinwheels the night before serving them.
  • Store: Keep any leftovers in an airtight container in the refrigerator. They will last up to 3 days.
  • Servings: This makes about 12 roll ups but you can double or triple the recipe for a larger crowd.
