Ingredients

  • 1 lb ground beef
  • 1 15 oz tomato sauce
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced onion
  • 12 oz egg noodles
  • 2 cups small curd cottage cheese
  • 1/2 cup sour cream
  • 2 cups shredded cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  • Preheat oven to 350 degrees F. Spray 9x13 casserole dish with non-stick spray.
  • Brown ground been in a large skillet over medium heat. Cook until cooked through. Drain excess grease. 
  • Add diced green pepper and onion and stir for 2-3 minutes. 
  • Pour tomato sauce over ground beef and season with salt and pepper. Turn to low heat. 
  • While sauce is cooking, cook egg noodles according to package directions. Drain water.  
  • In a bowl, stir sour cream, cottage cheese and ground black pepper. 
  • Layer half of the noodles, half of the  sauce, half of the cottage cheese mixture, and 1 cup of shredded cheese. Repeat layers. 
  • Bake for 20-25 minutes or until cheese is melted. 

Notes

Tips:
  • I used light sour cream and low-fat cottage cheese for this recipe but it works fine with regular. 
  • Feel free to use your favorite "melty" cheese. I love using a cheddar mix. 
  • If you have picky kids feel free to omit the onion or dice the onion and pepper very small.
