Ingredients

  • 4 Chicken Breasts
  • 2 tablespoons grill seasoning
  • 8 whole wheat tortillas
  • Salad filling
  • 1 English cucumber halved lengthwise and cut into matchsticks
  • 3 scallions diced
  • 12 basil leaves chopped
  • 1/2 yellow pepper cut into strips
  • 1 tablespoon sesame seeds
  • 2 teaspoons sugar
  • 2 tablespoons rice wine vinegar or white vinegar
  • pinch of salt
  • Peanut Butter Sauce
  • 1/4 cup chuncky peanut butter
  • 1 tablespoon white vinegar
  • 2 tablespoons soy sauce
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce

Instructions

  • Generously sprinkle chicken with grill seasoning on both sides.
  • Once cooked, slice chicken into strips.
  • Cook on indoor grill pan until done. (about 6-8 minutes on each side)
  • Combine salad ingredients in medium bowl and toss together.
  • Mix together peanut butter, soy sauce, vinegar, cayenne pepper, and oil in a separate bowl.
  • Spread peanut butter sauce on tortilla.
  • Add salad mixture and chicken.
