Ingredients

  • 1 1/4 cup flour
  • 2 teaspoons baking powder
  • 1 teaspoon pumpkin pie spice
  • 1 egg beaten
  • 1/3 cup brown sugar
  • 1 1/4 cup milk
  • 1/2 cup grated carrot
  • 1 teaspoon vanilla
  • 1/4 cup walnut or pecan pieces - optional

Instructions

  • Preheat skillet or griddle over medium heat.
  • In a small bowl, mix flour, baking powder, and pumpkin pie spice.
  • In a medium bowl, mix egg, milk, vanilla, and brown sugar.
  • Add the flour mixture to egg mixture and mix to blended.
  • Mix in carrots and nuts.
  • Grease griddle and add pancake mixture. Cook on both sides until golden brown.
