- 1 1/4 cup flour
- 2 teaspoons baking powder
- 1 teaspoon pumpkin pie spice
- 1 egg beaten
- 1/3 cup brown sugar
- 1 1/4 cup milk
- 1/2 cup grated carrot
- 1 teaspoon vanilla
- 1/4 cup walnut or pecan pieces - optional
Preheat skillet or griddle over medium heat.
In a small bowl, mix flour, baking powder, and pumpkin pie spice.
In a medium bowl, mix egg, milk, vanilla, and brown sugar.
Add the flour mixture to egg mixture and mix to blended.
Mix in carrots and nuts.
Grease griddle and add pancake mixture. Cook on both sides until golden brown.
