Southwest Hash Brown Waffles

Ingredients

  • 1 20 oz package Simply Potatoes® Shredded Hash Browns
  • 1/4 cup milk
  • 1 cup shredded Colby and Monterey Jack Cheese
  • 3 eggs
  • 1/2 cup red bell pepper, diced
  • 1/2 cup corn
  • 1/4 cup diced green onions
  • 1/2 tsp chili powder
  • 1/4 tsp cumin
  • salt and pepper

Instructions

  • Preheat waffle iron to the medium-high setting. Coat each side of the iron with non-stick cooking spray. 
  • In a large bowl, mix together eggs and milk. Stir in hash browns, cheese, pepper, onion, corn, chili powder, cumin and salt and pepper. 
  • Spoon a layer of the mixture on the waffle iron. Cook for 5-6 minutes. 
  • When waffle turns golden brown, remove from waffle iron with a fork.
