Sugar Cookie Sandwiches

Ingredients

  • Cookies
  • 2 3/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup butter softened
  • 1 1/2 cup sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1/2 cup sugar for rolling cookies
  • Buttercream Filling
  • 2 sticks softened butter
  • 8 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 1/2 cup milk
  • food coloring of your choice

Instructions

  • Sift together flour, baking soda, baking powder, and salt.
  • Cream together the butter and 1 1/2 cup sugar.
  • Blend in egg and vanilla extract.
  • Fold in dry ingredients until soft dough forms.
  • Refrigerate dough for at least 1 hour.
  • Preheat oven to 350 degrees.
  • Roll dough into 1 inch balls and then roll balls into additional sugar.
  • Place on parchment paper lined cookie sheets about 2 inches apart.
  • Press down ball with the bottom of a glass.
  • Bake for 8-10 minutes. Cool and then place on wire rack.
  • Buttercream filling
  • Mix together butter, powdered sugar, vanilla extract, and milk for approximately 5 minutes.
  • Add food coloring and mix to desired color.
