I found a bagged mix that included spinachbaby kale, and chard
1cupchopped apple
1/2cupchopped pecans
1/2cupcrumbled blue cheese
1/4cuppomegranate seeds
2tablespoonsextra-virgin olive oil
1tablespooncider vinegar
2teaspoonspure maple syrup
1 1/2teaspoonsDijon mustard
salt
pepper
Instructions
Chop spinach and kale and put in a large bowl.
Add apple, pomegranate seeds, pecans, and blue cheese.
In a small bowl, whisk together extra-virgin olive oil, cider vinegar, maple syrup, and Dijon mustard. Season with salt and pepper.
Pour dressing on salad and toss before serving.
Notes
You can use whatever green you like, the kale, spinach, and chard held up nice to the blue cheese. If you don't like blue cheese, goat cheese would be a great alternative.
