- 4 Chicken Breasts
- 2 tablespoons grill seasoning
- 8 whole wheat tortillas
- Salad filling
- 1 English cucumber halved lengthwise and cut into matchsticks
- 3 scallions diced
- 12 basil leaves chopped
- 1/2 yellow pepper cut into strips
- 1 tablespoon sesame seeds
- 2 teaspoons sugar
- 2 tablespoons rice wine vinegar or white vinegar
- pinch of salt
- Peanut Butter Sauce
- 1/4 cup chuncky peanut butter
- 1 tablespoon white vinegar
- 2 tablespoons soy sauce
- 1/4 teaspoon cayenne pepper
- 2 tablespoons vegetable oil
- 2 tablespoons soy sauce
Generously sprinkle chicken with grill seasoning on both sides.
Once cooked, slice chicken into strips.
Cook on indoor grill pan until done. (about 6-8 minutes on each side)
Combine salad ingredients in medium bowl and toss together.
Mix together peanut butter, soy sauce, vinegar, cayenne pepper, and oil in a separate bowl.
Spread peanut butter sauce on tortilla.
Add salad mixture and chicken.
