- 2 cups cooked quinoa
- 1/2 cup finely shredded carrots
- 1 cup chopped Napa cabbage
- 1/2 cup chopped purple cabbage
- 1 cup chopped kale
- 2 green onions chopped
- 3/4 cup pepitas
Dressing
- 1/4 cup rice vinegar
- 1/2 cup olive oil
- 1 teaspoon fresh chopped ginger
- 1 clove garlic minced
- 2 tablespoons honey
- 1 teaspoon lemon juice
- pinch cayenne pepper
In a large bowl toss together cooked quinoa, carrots, Napa cabbage, purple cabbage, kale, green onions and pepitas.
In a small bowl, whisk together rice vinegar, olive oil, ginger, garlic, honey, lemon juice and cayenne pepper.
Pour dressing over salad and toss to coat salad.
