Turkey pepperoni, sauce, cheese and green peppers sandwiched between two waffles for the ultimate lunch or after school snack. This pizza waffle sandwich is sure to be a hit with the whole family.
Two weeks into school now and you can probably tell by some of my recent posts that I have been trying to come up with easy, fast and delicious food for back to school. Trying to find things that will keep them fueled throughout the day from breakfast to dinner can sometimes be a challenge.
One thing we always have stocked in our freezer are Eggo® waffles. My youngest, Elle, loves to have them plain for breakfast. She wakes up every morning and says “waffle please” and then dances around the kitchen, eating her waffle, while I am packing lunches. I wish I had her energy in the morning! The other two usually take their waffles and eat them on our 2 block walk to the bus stop.
While the big kids were at school one day, Elle and I went to Target to stock up on some more Eggo waffles and I was really excited to find that you can earn $5 off Crayola products with the purchase of 3 specially marked products from Eggo. They also have this great activity booklet filled with a variety of fun activities that you can download. This was AWESOME because we are always in need of more crayons and markers.
After getting our waffles, I let Elle pick out a pack of Crayola crayons and markers for everyone to use when they got home so they each had their own supplies.
That afternoon, I downloaded the activity book for everyone and had their own special crayons and markers ready for when they got off the bus. When Ava and Major get home from school they need a little time to unwind from the day and have a snack so this activity booklet was a fun way for them to decompress.
They were so excited to see their surprise and I also surprised them with these yummy pizza waffle sandwiches. Waffles and pizza together as one sandwich, heck yes! This was a great way to fuel their minds and bodies to get them ready for their after school activities.
For the pizza waffle sandwich I used Homestyle Eggo Waffles, marinara sauce, cheese, turkey pepperoni and green peppers, super fast and easy.
I place a little marinara, cheese, turkey pepperoni and green peppers on one toasted waffle. Then place another toasted waffle on top, making a sandwich. Put the sandwich on a panini press and cook until the cheese is melted.
All of the kids loved the sandwiches and the activity booklet. Even my 7 year old enjoyed the puzzles and games included in the booklet.
Ava decided to play tic-tac-toe by herself ensuring that she would win every time. 🙂 Major loved the maze and Elle just likes to color on everything.
Pizza Waffle Sandwich
- 4 Eggo Waffles I used Homestyle
- 1/4 cup marinara sauce
- 1/2 cup shredded mozzarella cheese
- 8 slices turkey pepperoni
- 1/4 cup diced green bell pepper
- Place waffles in toaster and toast until slightly browned.
- Spoon 2 tablespoons of marinara sauce on 2 of the waffles.
- Top marinara with cheese, 4 slices pepperoni and green pepper.
- Place another waffle on top, making a sandwich and then put in a preheated panini press.
- Cook until cheese is melted, about 3-4 minutes.
